Thanks Carl and Rod,
Now I can use words like surprise¹ etc without the spell check
automatically changing the s¹ to z¹. Weeee hoooo.

Hey Anthony
You need to change the language preference within Word. Word typically pay
no attention to the System preferences.
Within Word, under the Tools menu, go to Language. Set English (AUS). You'll
probably want to hit the Default button there as well to change your default
template. If you have any templates saved already, make sure they are set
with the same language preference.
